Place the files

gnuplot
gnuplot_Be

anywhere that is in your search path.

The help file 'gnuplot.gih' needs to be in the location
/boot/local/lib/gnuplot.gih
to be found by gnuplot.
To learn how to use gnuplot, type help at its prompt
after you have properly positioned the gnuplot.gih file.

More about gnuplot can be found at
http://www.cs.dartmouth.edu/gnuplot_info.html

Running gnuplot:

At the Bash prompt inside a Terminal, launch
gnuplot from the command line. When the
'beos' terminal is used (the default), gnuplot
will use the outboard driver program 'gnuplot_Be'
to display the plots.

About this port:

This is the official Gnuplot 3.5 sources plus a patch that
fixes a known memory management bug. The outboard
graphics driver 'gnuplot_Be' was modeled after the X11
port.

Work is in progress on the Gnuplot 3.6 beta port.
